原因調査
Rを動かすにはgfortranが必要で、それはgccパッケージにバンドルされているそうです。
そこでgccをインストールするのですが、そこにポイントがあります。
brew install gccを行っても、そのままではそれらは読み込まれていません。
次の通りデフォルトのgccのみとなっています。
$ gcc --version

解決方法
brew install gccでインストールしたgccなどが参照されるよう、シンボリックリンクを作成します。
$ ln -s /usr/local/bin/gcc-4.9 /usr/local/bin/gcc
$ ln -s /usr/local/bin/g++-4.9 /usr/local/bin/g++
パスが通った場所にシンボリックリンクを作成したので、期待通りの挙動となりました。
$ gcc -v
