リファレンスが読めない・・・
SheetNameクラスやSheetNamesクラスというものがあるが・・・
とりあえずこれで解決した。
workbook = RubyXL::Parser.parse("sample.xlsx")
sheet_names = workbook.sheets.map(&:name)
