下記のようにOmitを使う

type Person = {
    name: string;
    age: number;
    location: string;
}

type PersonWithoutLocation = Omit<Person, 'location'>
/**
 * 中身は下記のようになる
 * type PersonWithoutLocation = {
 *   name: string;
 *   age: number;
 * }
 */
