少しハマったので共有しておきます。
ejectする前に、expo loginしておくのが重要でした。
expo init testApp
expo login
expo eject --no-install
yarn install
npx pod-install
yarn ios
あと、XCodeでbuildしようとしてnodeが見つからないとエラーが出た場合は
sudo ln -s $(which node) /usr/local/bin/node
