TARGETED_DEVICE_FAMILY が 1だとiPhone、２だとiPad、
1,2 だとユニバーサルアプリになるそうです。

Xcodeからのたどり方は、アプリ > General > Deployment Info > Devices で iPhone　と　iPad か Universalかを選択できます。
