2017年10月頃に調査した内容のまとめです。

UserDefaultsのバックアップ・リストア

こちらにまとめた通り、いずれのパターンであってもバックアップ・リストアで、データが復元されます。

KeyChainのバックアップ・リストア

こちらにまとまっている通りです。
要約すると

  • 同一デバイスであればいずれのケースもデータが復元される
  • 異なるデバイスの場合は、 暗号化されたiTunesバックアップから復元 の場合のみデータが復元される
  • 上記以外のiTunesバックアップ、iCloudバックアップからの復元ではデータが復元されない
