結果

  • texture typeをSprite(2D and UI)→Editor GUI and Legacy GUIに変更

  • playerSettingsのOverride for windows, Mac, Linuxをoffに

すると治った。

ちなみにspriteに戻し、overrideをonにしてみたがバグることはなかった。overrideを切り替えたタイミングで設定が更新されたとかだろうか。
