調べたらあっさりと見つかったのでメモ。

ようは、使用するエディタをちゃんとgitで明示的に指定しておかないとダメだったらしい。
git config --global core.editor "/usr/bin/vim"
こんな感じでちゃんとvimでの編集・保存が出来るようになった。
