Nonprofit Cloud is the new nonprofit product that is built on Industry Cloud core. It is a very different product than Nonprofit Success Pack (NPSP), which is a series of managed packages installed on the regular, non-Industry Cloud Sales version of Salesforce. Either one may work just fine for your nonprofit and both are designed for nonprofits.
The current version of NPSP has been around for about a decade while Nonprofit Cloud came out this year. Can you say more about the functionality you are looking to do and size of your nonprofit in terms of Salesforce users? Do you do programs, case management, fundraising, a mix of those, something else, etc?
If you go with NPSP, note that the above advice from Keiji is outdated - trial orgs no longer convert to your production instance as of April this year. You can definitely try them both out for 30 days for free but that trial org no longer ends up being your production one when you finish your sign up.
