The last activity saved on Trailhead isn't the one used to delete inactive orgs, I believe that is more to do with user logins. Trailhead only tracks modules done through it as activities.

I hope you got pass this but just incase (and for anyone else) you will have to return to "Object Manager" tab > "Field & Relationships" > "Discount Percentage" . This (Discount Percentage or Percent) is where you will have to uncheck the required field depending on your error code/syntax.

I was able to complete this with Read/Create/Edit selected for both Accounts and Contacts. I think the bold is misleading and it is meant to convey all three of those permissions since they are listed (which is why delete is not).
