rbenv install ではなく ruby-build を直接使うとディレクトリを指定できる。
MAKE_OPTS="-j 4" ~/.rbenv/plugins/ruby-build/bin/ruby-build 2.1.0 ~/.rbenv/versions/haikanko
使う時は
$ rbenv local haikanko
みたいな。これで ruby のバージョンをあげてもアプリの起動スクリプトの修正が不要になりますね。
